Theory and Method

Food freeze drying begins by freezing the product, turning water into ice within its structure. The chamber is then brought to a vacuum, allowing the ice to convert directly into vapor through sublimation. This vapor moves toward the cold trap, where it is captured as ice, helping maintain stable pressure and temperature conditions inside the chamber.

A carefully controlled shelf and chamber environment supports the primary drying phase, followed by secondary drying to further reduce residual moisture.
